Ahijo is a dish cooked in garlic oil. One of my favorite food, known as Ajillo in Spanish and the Japanese version is known as shrimp ahijo.

To Simmer. In a medium saucepan, combine ½ cup sake and 2 Tbsp mirin. Turn on the heat to medium and bring it to a boil to let the alcohol evaporate. Add ½ cup dashi (Japanese soup stock) and 2 Tbsp usukuchi (light-colored) soy sauce and bring to a boil again. Once boiling, lower the heat to maintain a simmer.

Put olive oil, chopped garlic and dried chillies in a small pan and heat on a low heat. When the oil gets warm add salt and mushrooms and simmer. When the mushrooms are cooked add the prawns. After the prawns are cooked, sprinkle with black pepper and serve while it's hot. The garlic oil goes well with baguette.
