've been kind of obsessed with beetroots lately. And lentils. And burgers… Or sliders. There is this awesome place in Dubai called The Smokin'9 and they serve only sliders. Nine of them. One even vegan! And although the one is made with a quinoa patty, it inspired me to make these healthy Beetroot Lentil Sliders during the weekend.

For the BBQ Beet Kimchi Sliders. Steam the beets in a steamer or steamer basket for 25 to 30 minutes, or until fork-tender. While the beets are steaming, add the lentils and water to a medium saucepan. Bring to a boil, reduce heat, and simmer, uncovered, for 10 to 12 minutes, or until just tender, stirring occasionally.

Instructions. Steam the beets and potatoes in a slow cooker or over the stove until soft… approx 30 minutes. Puree the beets, potato, and quinoa in a food-processor to give approx 2 cups of wet ingredients. Mix all the dry goods together and begin adding to the beet mixture.

Put the chickpeas in a bowl and mash them roughly, add the cumin and chilli and mash again. Add the beetroot, parsley, breadcrumbs and egg and plenty of seasoning. Mix well and form into 8 or 12 small patties. STEP 2. Heat about 1 cm of oil in a frying pan and fry the patties on each side until they are crisp and brown. Drain on kitchen paper.

Variations To The Beetroot Sliders. Instead of making smaller patties and sliders you could make bigger burger patties. If you'd like more punch in your patty or sliders you can add some chilli flakes and garlic or paprika. I've left the flavours very rustic and only used salt and pepper but if you'd like a more robust flavour feel free.
