Start by heating up some avocado oil in a large skillet. Add your butternut squash and sauté for a few minutes. Add in the diced onion, garlic, can of crushed tomatoes, basil, and salt. Cover + sauté until the squash is tender, about 20 minutes, stirring often. Transfer the veggie mixture to a blender and add the broth.

1 (15-ounce) carton part-skim ricotta cheese. 1 (15-ounce) carton fat-free ricotta cheese. 3 cups diced peeled butternut squash. 6 cups Smoky Marinara. 12 oven-ready lasagna noodles (such as Barilla) 1 cup (4 ounces) grated fresh Parmesan cheese.

The Method. Heat extra virgin olive oil in an 8-inch skillet over low heat. Sauté garlic until lightly golden, about 3 - 5 minutes. Increase heat to medium and add Butternut Squash "Rotini"; sauté for 6 - 7 minutes, stirring often. Reduce heat to low, stir in marinara sauce and cook until warm, stirring often. Add Parmesan cheese on top.
