To make the starter: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Mix the 1 cup (120g) flour, 1 cup water (227g) and yeast together in a large bowl or the bucket of a bread machine. Let the mixture sit for about 45 minutes. See "tips," below, for instructions using SAF Gold yeast.
