Champagne Soaked Berries

Step 1. Combine Champagne, 3 tablespoons agave, and rind in a large bowl. Add berries and toss gently to combine. Cover and chill 30 minutes. Place cream in a medium bowl. Beat with a mixer at high speed until stiff peaks form. Beat in remaining 1 tablespoon agave. Place 3/4 cup berry mixture in each of 8 bowls.

Wash the strawberries and pat dry with a paper towel. Add the strawberries to a large bowl and pour champagne over the berries, covering entirely. For two pounds of strawberries use about one.

1 cup fresh blackberries, 1 cup granulated sugar, 1 cup water. Take off of the heat and drain the blackberries, keeping the syrup in a separate bowl. Set both aside and allow to cool. Once blackberries and simple syrup are cooled, spoon about 4 tablespoons of syrup into the bottom of each champagne flute. Top with champagne.

Place a can of frozen limeade concentrate in the pitcher and stir it into the soda. If you are using fresh berries, muddle half of them in the drink. Frozen berries go in at the end. Pour the champagne in the pitcher and stir everything together. Add the rest of the fresh berries or all of the frozen berries.

Instructions. In a medium saucepan, combine the berries, vanilla, sugar, and water. Bring mixture to a boil and reduce heat to low and simmer for 10 minutes. Final tip: Champagne is expensive, so for the marinade you can substitute a more affordable sweet wine like Moscato. It can be found for just $8 or $9 a bottle. This type of champagne is dry and will go perfectly with the sweetness of berries. Now that you know what fruit goes with champagne, you are probably thinking about how to serve it. Place the berries (for example, a strawberry) on the rim of the glass. Serve with a bowl of fresh blueberries, blackberries, and raspberries, topped with a mint sprig.

To make the sabayon, use a medium stainless-steel bowl that fits on top and partially inside the pan but does not touch the simmering water. Off the heat, add the yolks and sugar to the bowl and whisk until they are thick, pale and smooth and then place the bowl atop the simmering water. Next, whisk in the wine a little at a time.

Gradually beat in champagne. Place the saucepan over low heat. With a portable mixer, beat on low speed for 1 minute. Continue beating over low heat until mixture reaches 160ยฐ, about 5-6 minutes. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Press plastic wrap onto surface of custard. Refrigerate until chilled.

How to Make Strawberry Champagne Preserves. Cut all the strawberries into equal sized chunks and add to a large pot with the rest of the ingredients. Stir and bring everything to a rapid boil over medium heat. Reduce the heat to medium-low and gently mash the strawberries to release their juices.

First prepare the simple sugar syrup by combining equal parts sugar and water in a saucepan over medium heat until sugar has completely dissolved. Muddle the raspberries and blackberries in a large glass. Add the sugar syrup and vanilla vodka. Turn a smaller cup upside down and fix over the large glass to form a shaker. Shake until mixed.

A quick stir to mix the two together and then top it off with more champagne. I like to add a bit of lemon-lime soda to the top of each flute as well. Extra fizz and all that.
