Today's post features my attempt at the Milk Street Sweet Fresh Corn Pudding recipe, which in turn was inspired by North Carolina chef (and PBS star) Vivian Howard. To start with the positive, the flavor of these pudding souffles was fantastic - subtle sweetness from the standout corn, a true summer dessert.

Preheat the oven to 350° and have ready a greased, 2 ½ - 3-quart baking dish. Add the corn to a food processor or blender and pulse just until slightly broken up. Set aside until ready to use. Add flour, cornmeal, sugar, baking powder, and salt to a medium-sized mixing bowl and whisk to combine.

Howard starts by simmering corn kernels (fresh is best, but frozen is fine), sugar, salt and a vanilla bean pod in heavy cream, allowing the vanilla to steep off-heat. She then purees the mixture, adding it to a bechamel-like flour batter along with egg yolks and lemon zest (and some reserved corn kernels, for texture).

Spray or butter a 9 x 9 inch baking dish with cooking spray. Drain the corn well. Cook on low for 10 minutes. Remove from the heat and set aside to steep. In a small sauté pan, melt 3 tablespoons of the butter. Add the minced shallots and cook for 1 minute. Add the sliced garlic and cook for an additional minute. Add the corn kernels, 3/4 teaspoon salt, and 1/2 teaspoon pepper.

Stir in the corn and creamed corn and then pour into a well greased two quart casserole dish. Bake for 45 to 50 minutes at 400 degrees.

Add salt, pepper, and mustard, and stir to combine. Remove sauce from heat and spoon into large bowl. Beat yolks with fork to combine. Pour small amount of sauce into yolks, whisking to temper yolks, then return yolk mixture to bowl with sauce, whisking to combine quickly. Fold corn into sauce mixture.
