How to cut an extra large zucchini: Cut the ends off, about an inch on each side. Slice horizontally, down the length of the zucchini. Remove the seeds and tougher center from both sides. Peel the skin for shredded or cubed zucchini. Leave the skin on if stuffing the zucchini.
