Cut the onion into thin slices. Peel the carrot and chop into half rounds. Remove the leafs from the celery and chop the stalk into small pieces. Roughly chop the tomatoes. Method. Heat olive oil in a large pot or dutch oven over medium high heat. Add the pancetta and cook for 4-5 minutes. Add the onion, celery, carrots, salt, and pepper.
