This isn't especially filling, but it does have a nice texture and taste to it with the cauliflower and butternut squash providing a really satisfying meal that feels a lot like you are eating real risotto with rice. This tastes a lot better when you make it on the stove top, but even in the microwave the butternut squash and garlic flavors.
