Chocolate tutu cookies are traditionally made for All Saints Day in Sicily. They're baked as a tribute to deceased relatives and loved ones. Italian Americans make them as a Christmas cookie, but they can also be found at other times of the year. Joe's family likes to make them for every conceivable holiday and celebration.

In a small bowl, microwave the vegetable shortening until melted. Set aside to cool slightly. In a large bowl whisk together flour, cocoa, espresso powder, baking powder, baking soda, cinnamon, and salt. In the bowl of a stand mixer, cream the shortening and sugar until combined, about 2-3 minutes.

Tetú are Sicilian chocolate spice cookies. These cookies are outrageously dense with chocolate, spice and orange scented mouthfuls. Depending on what part of Sicily you're from, they are topped with either a chocolate, lemon, or vanilla glaze. Tetú cookies are incredibly easy to make. This is my mother Maria's recipe.

Preheat oven to 350. Using an electric mixer, cream shortening with sugar. Beat in eggs, then milk & vanilla until well incorporated. In a separate bowl, mix all dry ingredients together, add to wet mixture, blend until just incorporated, then add raisins & walnuts and mix in briefly on low.

3. Sicilian Chocolate Spice Cookies. Tetu is a specific type of Sicilian cookie that contains chocolate, orange zest, cloves and nutmeg. The tetu made by this recipe have crushed walnuts in them, which goes great with the cocoa and various spices. They are glazed in with a mixture of powdered sugar and milk.

To a medium bowl, add the flour, cocoa powder, cinnamon, cloves, nutmeg, baking soda and salt. Mix with a whisk or fork to combine.
