These dairy-free Ice Cream Sundae Cupcakes are the perfect summer treat. I love making this healthy dessert on the last day of school when the boys and their friends crowd into our house to celebrate. Sometimes I assemble the Ice Cream Sundae Cupcakes for everyone.
