It is coming in to that time of year, my favorite time of year. During the Fall casseroles, soups, and warming food make us happy. Well I love making different versions of chili, so I created this Turkey Chorizo Mexican Chili. I saw some chorizo flavored ground turkey and thought I bet that would be good in chili, and it was!

Add chorizo, chili powder, paprika, cumin, oregano, cinnamon, pequin chili powder, cayenne and saute for 5 minutes, stirring often. Add turkey and cook until no longer pink, about 10 - 15 minutes, breaking it up as it cooks. Add beans and tomatoes. Mix well to combine. Reduce heat to low and simmer for 30 minutes. Serve hot.

Place the lid on the slow cooker and cook on high for 4 to 6 hours or on low for 8 to 10 hours. About 30 minutes before the chili is done, stir in the corn kernels. Once the chili is done, give it a taste and adjust the seasoning, if necessary. Serve the chili with your favorite toppings and enjoy!

Stir in the coriander, cumin and tomatoes, followed by the turkey, stock, chipotles, cornmeal and honey. Simmer over low heat to thicken, 45 minutes. Top with the chips, and serve with a lime.

How to make molé turkey chili: In a large Dutch oven or heavy bottom stockpot, brown the ground turkey and the chorizo in the olive oil. Add the diced bell peppers and onion. Directions: In a large Dutch oven preheated to medium high heat, add the olive oil, onion, and garlic. Saute for a few minutes until soften. Next, add the chorzio and break it up with a wooden spoon.
